Baby Zombies can spawn as "Chicken Jockies" Pigman, for the most part, use similar codes. As such, Baby Zombie Pigmen can spawn riding chickens. Rider Despawns, chicken doesn't, boom. Random Chickens.
You must've found it a short time after his friend left, as from what I recall, the Chickens now despawn as well due to eggs in caves causing lag. -

Don't need a light source, does need 1 side of the door to be open to sky or at least only a small overhang. -

If you went to the nether from am overworld location reasonably close to spawn (like less than 1000 blocks) then your nether portal must be within about 100 blocks of (0,0) ... so hit F3 and fly back to 0,0 and look around there. -

I also have Dr. Zharks Mo' Creatures mod, Minecraft Comes Alive mod, Optifine, and Mapwriter. I don't have a clue whats' going on and I'm not exactly the best at mods... Help please!

Looking good, I like how you added another story. Doesn't look quite so square like every other thing in the game.. XD

Here's some ideas:
Connect all three islands with a simple three wide bridge. Then, on the big one, possibly make a two story house in whatever shape or form or whatever (just so as long as it isn't square.) Then, on the island to the left, build a portal room to the Nether (if you have room; that one looks kinda small), or a tunnel leading down to your mine. I'd also suggest making your farming area a tad bit flatter to look more civilized if that's what you are aiming for. Under your house you could have your basement/storage also. Remember, these are all only suggestions, it's your world, do whatever you feel like. Just don't do like I did where I made the portal room right under my house. had to listen to that horrid sound forever until I broke it and set it up somewhere else. XD
Since you're on some islands, try taming some of those banks. Make some small fishing ports and fishing houses...
As for the villagers, you can either make them a small condo or just let them live in your house (but I recommend not, I made that mistake as well...)
How are you taking the villagers with you; minecarts?
Edit: Now that I look at it, try and expand your farm using dirt and make a tree farm. I can't see any trees anywhere and I don't really think you feel like traveling back and forth from your island just to get trees.

I found some diamonds right in front of me (branch mining) and also heard lava. I ignored the popping sounds, mined the diamonds, and lava came pouring in... tried switching to gamemode 1 but my fast typing made an error. I raged and ended up deleting the world...

Here's the list of stat names you should use :
"Accepted sub-criteria are: "acquireIron", "bakeCake", "blazeRod", "bookcase", "breedCow", "buildBetterPickaxe", "buildFurnace", "buildHoe", "buildPickaxe", "buildSword", "buildWorkBench", "cookFish", "diamonds", "diamondsToYou", "enchantments", "exploreAllBiomes", "flyPig", "fullBeacon", "ghast", "killCow", "killEnemy", "killWither", "makeBread", "mineWood", "onARail", "openInventory", "overkill", "overpowered", "portal", "potion", "snipeSkeleton", "spawnWither", "theEnd", and "theEnd2". Value is dependent on how many times the player has gotten the achievement (e.g. if a player has picked up three blocks of wood, their score for an objective with the "achievement.mineWood" criterion will be 3)."
But if the cheats aren't activated then you can't use this at all unless you "Open to LAN".
