I've got something for you for the COFHcore problem. Looks like it's actually asking for a mod called Redstone Flux, which I found here. Once I added the most recent 1.12.2 version of COFHcore (4.6.6.1) and Redstone Flux (1.1.1) to my game together with Advanced Warfare (2.7.0.772), it booted up just fine.

Hmm. You could try finagling something with a texture pack, but then I think it would change all the textures, not just the swamp. A quick google search turned up this Reddit thread, which looks promising. Looks like they're working on a similar project. There might be a mod somewhere that does it, if you dig deeply enough. Other than that, I'm at a loss.

Aha, found it! The Ancient Warfare 2 mod, which you can look at/download from CurseForge here. The mod adds the ability to make NPCs to farm resources for you, as well as being able to make NPCs as soldiers to defend your base and take on raids. Last I saw, it also added pregenerated structures full of enemy NPCs for you to raid, which is handy when you're on singleplayer and you want to use that army. It also adds some features like windmills.
I've only seen this mod in action on Youtube several years ago, so I can't speak to the actual quality of the current mod, but I thought this might be what you're looking for.
The downside is that its most recent version is for 1.12.2, so to play it, you'll need to go back a few versions. There's been some pretty hefty updates that have come out since 1.12.2, so the game is going to feel significantly different.
Since you mentioned you're new, I'll let you know too that in order to play this mod, you'll need to be playing on Java edition, and you'll also need to install Forge, which you can find for 1.12.2 right here.

How about an Atlantis-inspired sunken city around it? Or a tower that starts on the seabed and rises up out of the water? In fact, several towers connected together, like but not like a castle, could be cool, too.
This would be a lot of work, but soaking up all the water in a radius around your farm, building walls to keep the ocean out, and then building on the seafloor as if it were dry land can also be a cool effect.
