AdvancedAchievements: more achievements, because that's always fun, you can add custom ones yourself
ChatColor: lets you chat in colored text, all nice and fancy
ColoredSigns: just like chatcolor, except you can color text on signs
ChatItem: lets you display items in chat, so you can hover over it's name to see info about it
DeathMessagesPrime: custom death messages
DiscordSRV: allows me to connect the server to a discord bot to post server info (players, uptime, etc.) and can even live-post the in-game chat to the discord channel and vice-versa
Jobs: lets people have jobs so they get some money every time they do an action related to their job such as mining, woodcutting, farming, taming, etc.
McMMO: makes minecraft more like an mmo so you have skills, abilities, bonuses, etc.
ShopChest: lets people run shops with chests, so you can sell and buy items
SilkSpawners: gives you the ability to mine mob spawners with a silk touch pickaxe without it not dropping anything
Vault: manages the economy
Warps: lets people warp to spawn and other locations

Update: Thanks for responding, guys! I will take your ideas into consideration. As I mentioned in my main post, jobs will 100% be added. Government stimulus sounds interesting, I'll do that but it won't happen often. Bounties would be good, but that would most likely not happen as my server is more anti-PVP oriented (i.e no PVP unless both players agree) so it will probably not happen.
As ScotsMiser has pointed out, money sinks also must be in play to take money out. I am considering making you pay for more claim blocks, however you will also earn some every minute so it is just in case you need more claim blocks fast, or perhaps a tax on buy/selling from a chestshop. However, what are your guys thoughts? Keep commenting!
So, I am currently setting up a Spigot server with Economy, McMMO, and more plugins such as a chestshop. How would money get put into circulation? I am not doing a server buy/sell shop to encourage players to create their own shops. But how would players earn money?

I play it a ton. Hosting a spigot server with my friends is a BLAST. minecraft is one of my favorite games to play and have been playing for a few years, since 1.7.10 (but i have been playing months before on xbox 360, that's how i found the game). I have always been that bit closer to Roblox (and by that bit, i mean i used to play it every day after school since finding it in 2012) but Minecraft is really fun and I enjoy it very much. I play exclusively servers, i just can't play by myself without going to a server(maybe all those days of playing Roblox, huh?)

However sk3wl, as sunperp said, the domain dates before the game, which was made in 2009, and the .com website goes back to 2003

Did you try it on creative first? Always test a machine out on creative mode before doing it in survival, for the sake of your resources and time.

Totem of Undying(obviously)
Elytra(flight)
Debug Stick (so many things to do/break with it)
Ender Chest (secure storage)
Gold block (you'd be rich)
Ender Pearl (teleportation)
Any potion ever (speed, strength, fire resistance, there are tons of cool/useful effects with potions)
Barrier (technically counts as a block, a lot of pranks could be made using this)
