If I understand your question correctly, I don’t think it is possible to influence the trades of a wandering trader.
The wiki says that, like villagers, the wandering trader will lock a trade after the player has purchased it several times But unlike villagers the wandering trader cannot unlock those trades again.
After a while the trader will despawn and another one will eventually show up. In my experience the new trader will offer different trades.
I don't think the death of a wandering trader affects the prices/popularity of the player in nearby villages, so once you've bought everything you need from a trader, might as well kill him, or at the very least, kill his llamas for the leather and leashes. If you wait until dark to kill the trader, you might be able to get a potion from him.

Is there a way to reset the trades of the wanderers, or you just have to find another one when the deal you want is finished?
