What strategies are effective at convincing your players to help pay the server's costs? What other big servers are keeping themselves running on donations, and what are they doing to succeed?
Normally if you have you depend on donations, its not wise to start a server. It's hardly ever steady income for the server.

The server owner could've easily downsized the server and in return paid a lot less.180 is a pretty big amount if you can't afford it and expect donations.

For example you can get a pretty darn good server from some other hosts for $60-$120 a month.
I can bet they went with some overpriced American host. See some American hosts cost around double or triple the cost of lets say a Netherlands or German host. Not worth it, especially for a Minecraft server where latency doesn't matter.

$100 a month at Hetzner will get you:
$157 at the same place will get you 24 gigs of RAM and the most powerful processor there is.
Reliable, cheap and powerful. Heck I've seen cheap 4 gigs VPS's cost more than this!
We are talking dedicated servers here buddy. Not home hosted.
