If you want to run your server with the downloaded map, you will have to rename the map to server_level.dat and then place it in the same folder where your server files are located. There probably already is a server_level.dat in that folder though. If you want to back up that map, just rename it. If not, just replace it with the map you downloaded.
And again, there will be a server_level.dat in your server folder. You need to delete that and put in the map you have downloaded into the server folder, and rename it to server_level.dat
Ah, it seems that your map isn't getting reverted, but rather re-generated (it's not the same map as before, but looks very similar).
What's happening is that your map file isn't gzipped, which is Minecraft's way of keeping server level files small.
I'm not completely sure of the best way to fix that, unfortunately. Try using WinRAR to turn your server_level.dat into a .gz file, then renaming it back to .dat. You may have some luck that way.
But I have a probleme it is in what file has to I put the map.
