I don't think you can. Sorry, once you commit to update to the 1.2 beta, you're kinda stuck. Nothing to do but wait for the "real" 1.2 to come out and Realms to update too.
Unless, you restore your computer to a pre-update date. (Ask Cortina about "file history"). Hopefully you had it "on".
Delete any local worlds that you played in the Beta. They were upgraded and can't be downgraded. If you have exported copies of those worlds from before you opened them in the Beta, you'll be able to import them again after reinstalling Win10 Edition.
Use the Insider Hub app to unenroll from the Beta by gong to Insider Content > Win10 Edition and clicking the Manage button.
Uninstall Minecraft by right clicking it on Start and choosing Uninstall.
Open Store. Select My Library from the account menu (at the top, next to the search box).
Find the Games section and click Show All. Click on Minecraft: Windows 10 Edition to get to the regular game page. It should say "You own this product" and have an Install button.
Scroll down and make sure it's version 1.1.4 (look for "What's new in version 1.1.4").
When you've found it, click the Install button at the top.
That should do it. If it installs successfully but won't open or crashes when you try to play a world, it may be that the Beta left files behind that are interfering. If so, come back for advice.
Unenrolling and uninstalling does not work. Somehow the install files are cached somewhere and I can't find them to delete them. If I log into windows store and download minecraft on a different PC, I get the 1.1.5 download. But I cannot get my main PC to "forget" I had a beta. Tried wsreset too... I know my store account is able to get the stable non-beta version, but I don't know how to clear the beta out of storage so it gets a fresh "stable" copy?
Edit: I've also tried a secondary user account on my PC and it still installs the beta as well. Doesn't download more than 1mb of data and just says it's installed nearly right away. It's not re-downloading the data to get a non-beta version - how do we fix that??

I can use a different windows 10 computer and log in with my MS account, and download minecraft from the store and get the non-beta version, so I know I'm uninstalled from xbox properly. It just seems like the cache doesn't really get cleared even with wsreset and the download only shows a few mb downloading instead of the full hundred+ the initial time I do it on a new PC.
Try uninstalling Minecraft after leaving the beta, reboot the computer, and then install it again from the Windows store. It did crash after running it the first time after installing, but then I tried running it again, and it was fine and back to normal. I found the reboot suggestion from the Minecraft beta forum; however, only rebooting does not work without the uninstall first. Hope this helps, as we had the same frustration with this.
I deleted it... but now I cannot download minecraft anymore. I get an error 0x80070003 which looks like I might have porkchopped the windows updates part of windows now. It was obviously the problem - so I'll keep tinkering and get back with more info once I have it...
The proper way to delete these files is using disk cleanup and choosing to remove delivery optimized files. To stop these from eating up HD space you can follow this guide to turn off this feature:
It takes longer to download the initial 1.2MB installer file, but skips the content and pulls that magically from somewhere else because it still doesn't download 132 MB like it should... Therefore it's still installing the beta. Anyone else figure this out?
Well i gave up, upgraded my M.2 SSD, reinstalled windows, and now I have the stable non-beta version again. I hate Microsoft sometimes... Sorry to anyone reading this thread that this was my only resolve to share.

Does anyone know how to get back to the standard Windows 10 version? I like the update but I am really missing the ability to access my realms.

Yep I tried that too... I'm ready to format and start over... this is ridiculous.
I found a 132MB file in the windows updates folder:

That video was almost 10 minutes long to just tell you to unjoin the beta from the xbox insider hub... thanks anyway though.
