Yes there is a very easy way.... root it.
And I am guessing you dont have a pc so bring it to a friends house or pay someone to do it at a store (Yes they have them)
You could try find an app for recording if you really dont want to root
i would Root it, but my mom thinks it will mess up the 200 $ Kindle:P And i DO have a PC, but my mom thinks it will mess it up too
Here you need a PC but no root. you enable it wile you usb debugg hope it helps
step 1: go to settings click more.
step 2: in more youll find more options.
step 3: click device and switch it to on in allow installation of applications.

step 5: open the display recorder and follow the instructions in there (You need a PC no root )
Good luck getting decent video quality from USB Debugging, depending on your USB connection you're lucky to get more than 2 FPS. Due to the way Android is structured, you simply can't record your screen if you are not rooted. Period. Rooting gives applications access to the core system of Android, part of which is the screen (thus screen recording uses root). There's absolutely no other way.

Root it with QemuRoot. Super easy, barely 5 minutes.
All you have to do is follow the instructions CAREFULLY.
Google it up. Then get SCR screen recorder.

Dont make a youtube series on MCPE... people are watching people play the much more advanced verson called PC and yes pc's have tons of free screen recorders... just get a good headset and a good screen recorder...
