There must be a way to do this as I've seen Hermits do it but, is there a way to stop the game (Java Ed) to stop closing when I hit the Windows key or click on something on my other monitor? I have a third-party add-on but it's far from perfect. Is there a better way? Or is it something that could be implemented into the game?
The game should not close itself when you switch to another program; that sounds like the game is crashing, in which case you should post the crash report and/or game output/launcher log (if it is only happening when the game is in fullscreen there are known issues with many games crashing when you try to switch to another program. In any case there should be no issues when the game is in windowed mode).
In that case it sounds like the game is minimizing then, in which case the solution is still the same - use windowed mode, as full-screen games actually run in "full screen exclusive mode", meaning that the game itself has exclusive access to the GPU so nothing else can be displayed, which is why the game is minimized when you switch out of it and the preview when you mouse over the icon in the taskbar is blank. When a game runs in full-screen mode, it can gain exclusive access to your graphics hardware — this is known as running in “Exclusive Mode.” Windows won’t render your desktop in the background, which saves on hardware resources. Windows doesn’t just have to switch from one window to another when you press Alt+Tab. It has to minimize the game and start rendering the desktop again. When you switch back to the game, the game has to restore itself and take control away from Windows. For a variety of reasons — especially problems with the way some games are coded — the game may encounter a problem while doing this.
You can see this in action when you have a game running in full-screen, exclusive mode. If you Alt+Tab out of it, you can hover over the game’s taskbar icon or press Alt+Tab again. You won’t see a preview of the game’s display area like you would for other windows. The game running in full-screen exclusive mode doesn’t redirect its output through the desktop’s display manager, so the desktop display manager can’t display a preview.

Ah okay thank you that makes sense. But does Minecraft have an option to switch to windowed mode? I thought it was only full screen?
Yes it’s in video settings I believe. Or maybe in options at the starting screen. I’m not sure where, but I know it exists.

try to see if u have any of your drivers using an overlay on mc it may be the problem
