I have a few worlds from like 4-5 years ago that I build tons of things on. One of them I just logged into for the first time in a few years and everything loaded properly. It was just a flat grass map.
The other one, has all sorts of terrain. I built tons of things over many chunks. I created backups before loading up the latest version of Minecraft, but I cannot recall which version I actually last played on. It spawned me in an area I did not recognize at all, because it was new terrain that generated on top of a bunch of things I built. Eventually I was able to find traces of my old creations when I explored a little bit. Using a backup copy each time, I tried several different versions of Minecraft. I noticed lots of blocks and chunks were missing when I loaded up 1.5.1 and 1.5.2. It seems that 1.6.1 is more like where I left off. I used lots of quarts blocks and horses, meaning a majority of the build work I did was around the time of the release of those items.
In 1.6.1, I found significantly more remnants of what I built before, but not a single building was completely left intact. All of them either had chunks of the buildings replaced with generated terrain, or invisible blocks altogether. A few blocks displayed the checkered black/pink "missing texture" skin.
I'm quite certain that my spawn point is in fact where I last left off playing.
Can anybody provide me with tips or assistance on how to restore my world to what it once was, instead of having sporadic chunks of my creations replaced with randomly generated terrain? It's really heartbreaking seeing all my hard work in ruins.
I think I have backups from before I loaded up a newer version though. It may just take a bunch of time trying to find the correct version to load into, but I'm looking for any potential fixes from third party applications or just anything at all really.
Are you sure that you never loaded the world in a version newer than 1.6? Loading a world in an older version will definitely cause you you are experiencing because they don't just add new blocks and items but change internal data structures with nearly every major update (case in point - opening a 1.13 world in any older version will completely wipe it).
One way to find out what version a world was last used in is to use MCEdit to analyze the world and look at the blocks and entities it lists; if you see anything that was not added until, say, 1.8 then that has to be the oldest version it was opened with (though not guaranteed as existing worlds will not get most new content unless you explore new areas or spawn them in).
Also, the fact that you describe "missing texture" blocks is a good clue as to what may be happening - in 1.7 they replaced the ID for locked chests with stained glass and they had previously removed the texture for locked chests so they show up as missing texture blocks in 1.6 (otherwise, any unknown blocks will be removed when the world is loaded so you should never see missing texture blocks with the default resource pack). Thus, it is likely that you did play the world in a version later than 1.6 (1.7 was released in late 2013 so this fits with "4-5 years ago").
It is also possible that there may be world corruption; you could post the world and a description of the issue to this thread telling them about the situation (if not corrupted they can figure out what version it needs to be opened in). The game output can also be useful as it may list errors while loading the world (if there are a lot that are the same just post a few of them in a spoiler).
I did actually try to use MCEdit for Mac. The application seemed to load just fine (I even tried the new and old versions) but within about 10 seconds of loading up the world, it would just crash. I may try to run it with windows on a virtual hard drive if I have some time to see if that will work. I'll do some more investigating with that thread you linked me to and see if I can work this out.

I'm sorry your builds have been ruined, but once you load up a world there is no way to restore it.

TheMasterCaver's First World - possibly the most caved-out world in Minecraft history - includes world download.
