its probably your cpu or graphics card failing, or minecraft not recognizing it. Sadly i dont know of solution for this else than re-installing minecraft
From the f3 screen i already know my cpu is crap, but it did used to work at a solid 60 fps.
Also might be good to mention, it starts off only freezing when loading lots of chunks, which is normal, then after about a minute, it starts being completely frozen.

Check to see if the problem goes away with the vanilla profile . Optifine D2 is causing freezing on high end nVidia cards , where you freeze and cant move , only look around . Some other bugs since I updated Windows 10 x64 build 1803 . Your card may not support a full OpenGL .
Reset Optifine settings or delete optionsof.txt
and read what the Optifine setting do before you change any . render distance at 8 chunks
For older systems make sure your OS and drivers are updated .
install the Oracle Java 8 build 172 and point Minecraft to use it instead of the internal java .
Install the latest Forge and put , preview_OptiFine_1.12.2_HD_U_D3_pre , in the .minecraft / mods / 1.12.2 , directory

So as the title says, it freezes, then only works for 1 frame, and freezes again.
I have tried most of the solutions google gave me, like giving more ram, installing optifine, and multiple other solutions, but it still freezes!
It used to work a while ago, but recently it just completely stopped working.
Also I dont have any aniviruses running, or anything besides minecraft running, so none of that is the issue either
Please help!

Try older versions of Optifine , until you find one that works . Put Optifine in the mods dir, , do not double click install .
Try and find a updated Intel graphics driver here https://downloadcenter.intel.com/
Does your computer have a dedicated graphics card ? such as Dual graphics card , switchable graphics
example AMD /Intel or nVidia/Intel
I believe i have an integrated graphics card, as i am using a laptop.
I tried out the optifine versions, and C8 doesn't have the freeze! So, for now my problem is solved!
