Thanks, I wanted to find a way to use color codes (\u00a or §) and change these names to more customized ones. They have to be stored somewhere in some minecraft/ file!

It's in servers.dat in your game directory, but it isn't a text file that you can edit.
Also if you are using spigot/sponge you can use plugins that return a colored description of the server
