Sounds like not enough ram (Common Reason) or faulty ram (Unlikely Reason) or maybe a problem with Java... (Extremely unlikely but still possible.)
What's the specs of the PC and how much RAM are you telling Minecraft to use?

I don't see the options... we select Play from the launcher and it starts to download (additional patches I'm assuming) then crashes back to Windows desktop
Ok, the issue is that your graphics hardware doesnt have full driver support on anything beyond Windows 7. You will either need to reinstall Windows 7, use a different computer, or take that one to a shop/store and see if they have a 'newer' graphics card that will work on Windows 10 and with the rest of your hardware.

We bought minecraft for our son and cannot get it to work. Here is what we get...

Try the following, From the games Title Menu select Options, then Video Settings, scroll down and make sure Use VBO's are set to Off.
Its a Dell OptiPlex 780 running Windows 8 Pro, 4 GB of RAM
I don't see the options... we select Play from the launcher and it starts to download (additional patches I'm assuming) then crashes back to Windows desktop
If your getting the crash you showed before it even gets to the main menu, Follow the instructions here: http://hopper.minecraft.net/help/pixel-format-not-accelerated/support/#dxdiag and get the link it has you create.
