So, recently got a new computer and everything seems to be zoomed out and the GUI (set on large, auto is way too big and obnoxious) is much, much smaller than it was on the computer I used to play on. Even the inventory is so small that I struggle to see and navigate it. Is this something that can be fixed, or will I just have to get used to it? I really, REALLY hope it's fixable.

Maybe a screen shot will help, but did you change the monitor? If so what resolution is it set to? Maybe this new monitor has a much bigger resolution so everything seems smaller.

This can be seen if you make the default windowed version of MC a touch smaller, the GUI becomes much smaller.
It is probably because of your resolution (check it is on the standard ratio?).

Also, the resolution as shown in the launcher is 854 x 480. I haven't changed it at all.
The default resolution on the computer is 3840 x 2160.
Well there is your problem. thats Ultra HD resolution. You will just have to get use to it or switch to the BIG one.

I recently got a 4k monitor, I suggest changing the OS scaling to about 150%, as well as increasing your Minecraft GUI size.
