I don't know what you mean by not being able to maximize your screen anymore, but the "box" being small most likely means the GUI is set to small. It's in your video settings to scale up the GUI.

so my cat walked across my keyboard, and pushed some buttons, including F11, which fullscreens it.
now, I've gotten out of fullscreen by just pushing F11, but now I can't maximize the screen anymore!
I don't want it full screen, and I don't want the box to be small. I want it to be maximized. Usually this was as easy to do as any other window.
Anyone know if there's some magic way to fix this?

This is a long outstanding bug. The controls (go away/are disabled/whatever) after you exit fullscreen.
To get them to work again just exit minecraft while it is in windowed mode.
When you launch it in windowed mode the controls will work.
