So let's say I have 8GB RAM and I have this Modpack with ~150 Mods (many technical and magical mods, hqm etc), so how much RAM should I assign? 4GB? 6GB?
50-75% max works well. It really depends on how much total RAM there is. You want to leave at least 2-3GB for Windows.
What you don't want is to give Java too much, because its handling of large amounts of RAM is atrocious, causing performance issues. And it often does not need a lot (despite what the screaming masses may claim).
2-4GB is fine for most modpacks. Even larger ones.

Do NOT assign half of your total RAM. It causes system instability. Check Task manager and see how much RAM you have free.
The maximum you should assign is 40% of your total FREE RAM.
