I think this is just part of Minecraft, but is there a way to keep the text on items in an inventory from scrolling off the screen if the text is too long?

Going into fullscreen mode fixes this. Press F11.

Going into fullscreen doesn't work. I'm on a Mac by the way.

The hover text displays up and the right of the mouse in vanilla.

I can't get text to appear anywhere close to where you show it.

This is just how Minecraft is. There's no way to really fix this.

I disagree. This is how minecraft is:

Text to the right of the selected item. Proper descriptions are split onto multiple lines (possibly manually by the person who wrote them).
