So, I have the same exact problem here. I'll begin to broadcast and it'll only show a Grey Screen but the Audio is completely fine. I can hear my friends perfectly. That's with Optifine.
Switching to a different Profile of Minecraft that doesn't have Optifine and beginning to broadcast again, Audio was fine, Video was fine. It has something to do with Optifine itself.

OK... so i don't know if you guys will see this or if you fixed it but its rather simple:
Load Minecraft With any Optfine and do the following:
1.Go To Settings
2.Video Settings
3.Then Performance
4.And Turn Fast Render Off
5.That's it!!!! Broadcast and the video is back to normal
DISCLAIMER: This may lag you but if you don't mind then you have twitch brodcasting with optifine.
Message Me if it work because it worked for me and i wonder if it will do the same.
