For probably the past two ish months this problem has been happening. I open minecraft, launch, join a server, and I start client side lagging and my whole computer has mini-freezes. I open up task manager to view my cpu/ram load and am dumbfounded. Java/Minecraft is managing to use 98% of my system RAM. Usually, I update optifine or Java and everything goes back to normal, but not today. Everything is at its' latest update and I still am having this issue. I average around 300-600 fps on a server. They are the default ones, haven't done anything.

Curse PremiumI would verify your Windows is FULLY up to date.
Your NVIDIA Capture servers is the only high Disk usage at 2.5MB/s - which isn't that much.
SYSTEM should not be so high compared to the rest.
Could you show us a Screen shot of your Details Tab sorted by Memory usage? This would be most beneficial.
