Have you did mouse clicking tests to ensure your mouse is not the culprit itself? When micro-switches start to go bad, often times they will double click on single clicks. There is many websites with mouse clicking tests to note.
I have. It's not lag, it's not the mouse, it's minecraft. No sense barking up that tree again. It's a known bug with outdated LJWL installs such as what Minecraft uses. So that's what I need to know how to do.
Just ensuring. It becomes habit to ask such things when you see/answer such questions for a few years.
If not afraid to use a known and trusted 3rd party launcher. Then MultiMC is likely what you are wanting for such as I recall it can let you choose the LWJGL you want to use, even with Forge instance.
Anyone know how? The tutorials are all for unmodded clients. I'm using Forge 1492 1.7.10. I'm having that obnoxious double-click bug.

I see the option but not how to actually change it.
Any idea?
An apparently such is just an feature of pre 1.6 Minecraft.
There isn't an way to change LWJGL for 1.6+.
Maybe could try replacing the files with latest and then stetting the folder to Read Only.
