A while ago, whenever I tried to play Minecraft on PC, whilst in the game, whenever I try to look around or move it would keep freezing for a few seconds over and over. It would freeze, go back to normal, then freeze again, continuously. No patch took place before this, I changed no settings, it just started doing this in the middle of a game one day, while I was playing. No matter what settings I change, or what world I play on, it just keeps doing it. This has been happening for at least a year now. Every so often I load Minecraft back up to see if there has been a patch to fix it, but every time I load a world, exactly the same thing happens. This is incredibly frustrating, as I enjoy playing Minecraft, and no longer can.

At least two things that can cause this kind of behavior:
VSYNC on under some circumstances.
Incorrect Java heap configuration.
