Every time I try, my screen just jerks to the side. How do I fix this?

Never ever seen or heard of this happening. I reccomend to report this to mojang support.

You did try to tame the beast after selecting a slot with nothing in it correct?
If you have anything in your hand you cannot mount any untamed horse.
