So when I was having issues with Minecraft crashing earlier, I had to update Java and then start using the old Minecraft launcher. But as it starts up the launcher, it identifies my operating system as Windows 8.1. I am most definitely using Windows 10. Does my computer not even know that it's Windows 10? Or is Minecraft not updated to know what Windows 10 is? At any rate, it doesn't seem to affect the performance of the game, I'm just kinda curious why it would think I'm still on Windows 8.1.

You can ignore whatever OS launcher tells you when it's starting up, it makes no difference if it says Windows 8 or Windows 10.
You're probably running the launcher in compatibility mode, you can disable that by right clicking the .exe -> "Properties" -> "Compatibility" -> Uncheck "Run this program in compatibility for".
And yeah, I was having trouble with the new launcher, and yeah, I did try reinstalling it. And no, reinstalling it did not work. So we'll see how the old launcher does... hopefully I stop having Java-related crashes.
