It limits the FPS to the monitor refresh rate. Most monitors are 60Hz and thus vsync will usually limit fps to 60. Vsync is usually better to leave on since the monitor can't show any higher fps than its refresh rate.
Yup, thats what I figured. I was wondering if it was mac-specific. Also, I even have optifine installed. I can edit in Final Cut Pro X, and run the Heaven benchmark pretty well.
Ok, this doesn't make much sense at all.
I have a Mac Pro with 24GB of RAM, a GTX 650, and two quad-core 2.4GHz Xeons and I get around 34 FPS.
I can set things to the lowest settings, same story. Setting things to max, same story. Something isnt right. Any suggestions?
make sure vsync is off or it will lock it at 30
Really? Odd, I didnt know that. Its certainly not like that on PC.
EDIT: just tried, still getting around 30-35 FPS.

Not sure I understand the question, but at some point I doubt it would do much good. I have it set to 4GB, more than it probably needs.

You can try to get OptiFine. I'm not sure if it'll work considering the specs of your computer, but try it out anyways

Get the version of Vanilla Minecraft you are running.
(For instance, if you are running 1.8.0 vanilla minecraft, you'd install any of the 1.8.0 OptiFine versions.)

Hmm.. Maybe it's your laptop.
Possibly could be the server, too.
Its a desktop. MacPro4,1 huge beast of a machine. The server runs fine on my PC.

Curse Premiumyou may try to turn down the chunk updates to get more fps instead. you find it in graphic settings -> performance, as far as i remember
