So I was going to play Minecraft, got in a single player world, and I got to work, then my mouse's started moving very fast sometimes, and very slow other times, I'm fairly certain it isn't my mouse, because it's completely normal when I'm not playing Minecraft or if I'm playing a game such as CS:GO. My mouse is a Logitech M325. kty
If you want to change the mouse sensitivity for Minecraft, go to controls in the settings and on the upper right corner is a slider for how fast you want your mouse to move (and ultimately how fast you look around). I'm not sure what @EddyKool means with Cinematic Camera Movement Setting.

Have you checked cinematic camera movement setting?
