Currently I'm having an issue where I can't go from a minimized Minecraft window to a maximized window. The maximize button is just grey for me and it won't let me click it. I can only go minimized mode or full screen.

This is a known bug that only happens after MC has been in full screen mode.
If MC starts non-full screen and you don't go full screen, then the maximize button will be available.
