Played 1.8.3 a few days ago. No problems. Started it today and it's Like a Virgin, Touched for the Very First Time. Contents of saves folder intact as far as I can tell. Only difference is that 15w14a showing up instead of 1.8.3.
That snapshot is an april fools joke and is not meant to be used as normal, it is special in its own kinda way.
To change your game to a different version, start the launcher. Select Edit Profile. In the "Use Version" dropdown menu, select the game version you want. Then click Save Profile.
