I've been attempting to extract the new textures for the blocks and items added in 1.8 to make a resource pack, but as far as I can tell the game won't update my minecraft.jar to include them. I've triple-checked the file location I'm installing the game to, but nothing. When I changed the install location to an empty folder in hopes of getting a full reinstallation, it only created the 'saves', 'resourcepacks', and 'logs' folders with no minecraft.jar in sight. Are the textures stored somewhere else now? Or is it just someone accessing the other minecraft.jars on my hard drive so that it doesn't have to install a new one? I know that the new launcher runs its own miniature java environment now, so does that have anything to do with it?

Those still go to %appdata%/.minecraft specifically under the versions/ directory example %appdata%/.minecraft/versions/1.8.1/1.8.1.jar
then inside that is assets/minecraft/textures
