I know that forge doesn't use Java 8, but I've never even downloaded Java 8, I only have Java 7 on this computer. And everything was working fine. Then I updated the launcher as it said to at the top of my launcher, and since then, I can't use forge at all. I have no idea how to get back to the old launcher and now I am get frustrated. I can't figure out how to fix this. Can someone please help me out?
Also, by not working, I mean that when I click play on a forge profile, it just wont pull up anything else. The launcher closes, and then nothing else comes up. If I try to play on a profile that doesn't have forge, it works perfectly.
When you say that you can't use Forge, do you mean that the game crashes when you try to launch it, with a "java.util.ConcurrentModificationException" error (you'll have to tell the launcher to remain open; in the profile editor there is an option to set the visibility; since this doesn't generate a crash report, which makes the launcher reopen if closed)? Note that this mainly applies to versions of Forge prior to 1.7.10; if you have the latest version for 1.7.10 there shouldn't be a problem, older versions must use Java 7 though or have a patch installed.
To use Java 7 instead of the launcher's built-in Java (which is Java 8), click on edit profile and near the bottom should be advanced Java settings (where you set memory and stuff), including a link to the Java executable; you'll want to check it and replace what it has with a link to javaw.exe in your Java 7 installation, which (in my case) is located at C:\Program Files\Java\jre7\bin\javaw.exe.

Anytime I change the setting to where my java is, and then click save, it just goes back to what it was before I changed it. It wont stay to what I change it to.

I'm not sure why it wouldn't be saving your settings but you can still use the older launcher (without its own Java) if you click on "show all platforms" on the Minecraft download page (this is a bit confusing, as many people will just assume "all platforms" means Mac and Linux and never see that there is an alternative for Windows, the only OS with the "native" launcher so far):

If you have issues with the new Windows download, you can try the old one by downloading Minecraft.exe. If given the option, save the file instead of running it. Save the file anywhere you'd like, then double-click the program to run. This does require Java to be installed, however.
