But Minecraft says i'm running on Apple's Java 6 (I don't know why)
Mobtalker2 needs java 7.
You can either go to mc launcher, hit edit profile, go down to JVM where it says exectuable, check the checkbox and then point the path to latest java you have (you can get file path from java panel in system preferences) or
you can go to Applications->Minecraft->right click and select Show Package Contents->Contents->Resources->Java->right click on Bootstrap.jar, select Make Alias, drag alias to desktop and start minecraft by double clicking that icon instead of applications one (this is to bypass hard coding of the default icon to java 6).
I uh, did some deep research and tried to install Java 8 to work this with but it didn't. So is it a must to use Java 7 instead of Java 8 for this mod?
Er. I don't think so. The wiki said java 7 is needed and that usually means minimum 7 as in can't be java 6, though that's open to interpretation. (under prerequisites: http://www.mobtalker.net/wiki/MobTalker2_Downloads)
Are you sure your MC is loading java 8? Post the new crash report or if you don't have one, launcher log from your mc launcher, as java version will be listed there.

You have to do one of my two previous suggestions to force it to run on anything but java 6. Simply double clicking the default minecraft icon to start it is not going to work. It is tied to java 6.
So:
