Lag has been a big problem in 1.8 for me. I have a GTX 760 graphics card. If i press f3 + A my fps quickly shoots up to around 200 to 300 on most servers. When i start moving around a bit my frame rate slowly drops until it stops dropping around 30 fps. The frame rate becomes very unstable and ranges from like 25 to 200 fps. It fps keeps going up and down fast and is really unplayable at times. I've tried using optifine but still the same issue. I have the 64 bit java and a 4770k processor
The untrained human eye cannot see anything more than 60 fps, anything more than that and it looks relatively the same to most people. Have you tried to completely uninstall minecraft, reinstall it, and than try it on a vanilla client?
Then no matter what it says, if you're getting over 144 FPS then you're still only getting 144 FPS. Try limiting FPS to 144 to save on processing power.

This happened to me on the 1.7 update on my old computer. What I think is that it's a bug in Minecraft that only affects some GPUs because eventually, in one 1.7 update, it was suddenly fixed. You can also try installing Optifine and see if that helps at all.
