Just changed it from peaceful to easy. I was fighting creepers and zombies and the game crashed. The problem is that the game is no longer on my menu... but the file still exists inside the saves folder. This is the crash report.

When the game crashed, the level.dat file was corrupted and that causes the save to not appear in the menu.
You can try copying level.dat_old to level.dat and seeing if that fixes the problem, but you may have other damage to the save as well that can cause weird things and lag, in which case you might need to use mcedit to attempt repair.
