So can I ad more mods into a profile I've already modded? Or if I want to use different mods do I need to use a different version of MC? or just different profiles?
No, you can add more into the profile you already have, as long as they match the game version.
Usually you'll use profiles if you want to try out a new mod or mods separately, or you want to try a different combination of mods, or a different version of the game and so on.
Keep in mind though, if you're adding more mods into your current world, that some mods, to be effective should really be present at world creation. Like if you now put in a biome generating mod, and you've already explored 10k blocks in every direction, you're unlikely to come across any BoP biomes at all as it won't modify the already discovered/created world. Same goes for ore generation mods.

BoP has a completely different world gen (You have to select "Biomes O' Plenty" as the world gen type, so I don't think you'll be able to put in and out stuff from other worlds without external stuff, like MCEdit), and some mods offer Ore regeneration.
Plus, you can make the multiple mods on profiles more simple/easy via MultiMC.
