I'm using AMD Eyefinity to play Minecraft. It works great in windowed mode, however when I go to full-screen instead of extending Minecraft across all 3 displays, it duplicates the same image to each display, as if the monitors are purely in duplicate instead of extend mode.
Any ideas? I'm guessing that Minecraft "sees" my single screen resolution and makes full screen that instead of using my full Eyefinity resolution.
I've noticed that in other games, I can set the resolution. When I set it to my single screen resolution it does the same thing that Minecraft is doing, but I usually have the option to change it to my full Eyefinity resolution.
I'm not entirely sure, as I have neither AMD nor multiple displays, but Optifine adds a fullscreen option. I realise this is in "unmodified client support," but http://i.imgur.com/U86Lsyd.png
You can change the resolution it fullscreens to.
I apologise if this solution is not satisfactory. Probably won't be applicable for 1.8 as there's only an alpha version out for 1.8 right now.

Yeah, sorry. Hopefully someone can find a more relevant solution. Figured I'd point out mod support just in case.
