How do I do that? Ive tried deleting everything and re-installing but that didnt work
Ok Well when you open the launcher in the bottom left there are profiles, what you want to do is click "new profile" and then change the version to the one you want and click save profile. After that Im not quite sure what it is on mac, (its %appdata% on pc) like how you install mods. Go into .minecraft>versions and delete the one that was not working.

do you use mods? if you do your .minecraft folder(or whatever it is on mac in the roaming file) might have caught a virus or something, to fix, you will have to delete the entire file and start from scratch. If you don't use mods than you may have caught a bug from another file you downloaded and it is only affecting minecraft, in which case you will need to secure the bug and remove it, if you found the bug and removed it and your minecraft is still glitchy, try reinstalling from scratch by deleting the file and redownloading it from minecraft.net. i hope that helped.

Try deleting the folder of the version you're playing in in the \minecraft\versions folder
On windows, the path (in case you didn't know) is
\%APPDATA%\Roaming\.minecraft\versions
On a mac it is
~/Library/Application Support/minecraft/versions

Curiously, did the glitches start after you upgraded to a newer version? If so, it is possible that your computer is not compatable with it.
