I stopped playing Minecraft short time ago, and just recently went back to playing.
Previously I had no such problem, could anyone help me? I'm not using any mods except by the minimap thing, with or without Optifine is the same thing. (I'm using google translator).

OS - Microsoft Windows 8.1 Single Language
Processor - Intel® Core™ i3-2310M CPU @ 2.10GHz
Video - Intel® HD Graphics 3000
Resolution - 1366 x 768

6,00 GB RAM.

it's an i3 core. Don't expect too much.
To make it faster, you can install Optifine and FPSPlus. They make your game faster.
If you want over clocking, get Razer Gamebooster. Also makes your game faster.
Also, is your PC 32bit or 64bit? You should consider getting an i5 core and Intel Iris graphics.
One last tip: check your allocated me more. It's currently hidden behind the minimap, so I can't see it. You may need to allocate more RAM to minecraft.

After a crash I noticed something weird in the log: "JMV Flags:-Xmx1024M-Xms512M", I think this is the cause of the problem and would like to know how I change these flags, please. Thank you.

No, every single world. If i take a look to the memory usage, in the beginning it says (180MB) of 989MB = 60FPS/No lag, 10 minutes later it says (280~315MB) of 989MB = 6~11FPS/Lag. The allocated memory is stopped in (50% 495MB).

Ok. Your problem is that you need more RAM allocated to your minecraft. To do this, you have to:
1. Open up your Minecraft Launcher
2. Click "edit profile" on the profile you want to use
3. There should be a custom Java parameters you can type into.
4. Type: -Xmx4096M-Xms1024M or -Xmx4G-Xms1G. Whichever floats your boat.
5. Save, then launch. It Should run faster.
