For a while now, I have been having this issue, but decided to report it now. I am not sure if it is due to mods, because it occasionally happens in vanilla Minecraft.
Basically, I can play Minecraft fine for a while. Then, I get extreme lag, 0 FPS, and i am forced to Ctrl+Shift+Esc and end the javaw.exe process, which can be up at around 3,000,000K. Normally, when there is no lag, javaw.exe runs at 700,000K. As I am typing, Minecraft is using 1,816,600K of memory, and I have only started it up. Haven't pressed anything or opened a world. The number is climbing, now up to 1,820,000K. Is there any way that I can fix this so it doesn't use as much memory?
I have tried many combinations of the following:
Allocating more memory
Allocating less memory
Reverting to original memory
Right click and set priority to "High" (can't set to "Realtime")
Ending other useless processes
Closing all other applications
Restarting Windows
Configuring Optifine for lower quality rendering
The problem isn't gradual, it just goes from around 70 FPS to 0 in like 5 seconds. I am not doing anything different in Minecraft, and am in the same chunk, so I am not loading them.

Physical Memory (MB)
Total: 5610
Cached: 200
Available: 206
Free: 8
Also, the javaw.exe is now at 1,830,000K, and I have not touched Minecraft at all.
I am running Windows 7 64bit, and allocating 2 out of my total 6 gigs of RAM to Minecraft. Any suggestions?
PS: I have 62 mods installed, and the problem remains on vanilla.
