I have found kind of an issue with java and mac osx. i had installed windows 7 on my mac to play some windows games with my wife. I noticed that I got like 120 fps in Win 7 and only like 30 fps in OSX so I started to dig. I found out that if you use the official mac version of minecraft (that is the installer from a .dmg file) it will force you to install the crappy java 6 that apple has had for years. I removed java 6 and tried to play to no avail even though i had Java 7. Minecraft wants the Java 6 that apple offers you to just click and install. I went back to minecraft.net and downloaded the universal jar and just double clicked and wham bam it all worked. I didn't even have to delete minecraft folders or anything. I just deleted the minecraft app in my applications folder and added the jar there. I am now getting 120 fps instead of 30 all on the same mac with nothing different except java. This is a 600 percent increase in frame rate all from what amounts to a line in some property file requiring the wrong java. I hope this helps someone because I have been going nuts for like a year with this terrible frame rate.
