Hi there! I;m having extreme difficulty allocating more RAM to my Minecraft/JAVA. This is causing me to have very low FPS and I was wondering if someone could help me with this issue.
Allocating more RAM does not give you better fps or performance. However you can read on here for information on how to do so, http://www.minecraft...-for-minecraft/
If you check the top right of my screenshot, you'll know why it will help
That screen shot does not show the minecraft defaults. So either you changed the memory already in your launcher profile, or you have an environment variable that is overriding the defaults (_JAVA_OPTIONS perhaps)

I need help setting the Java options. Minecraft crashes upon setting above 510.

Probably because you set up a fatal conflict with whatever is ALREADY MODIFYING the settings. That screen cap shows that something has limited your memory to less than the defaults as I said before. If you set Xms larger than what something else is setting Xmx, then you will get an error and Java will not start.
The first thing you need to do is get minecraft back to the defaults which will give you double the memory you have now. Check your system and user environment variables for a _JAVA_OPTIONS variable and delete it if you find it.
