I have this issue where I can play normally for about five minutes, then this intolerable lag shows up.
Did a GeForce update and Minecraft wasn't in the list of supported games.
ram isn't an issue, which is what's so confusing about this to me.

Well you answered your own question right here, the GeForce Experience Optimization is not compatible with Minecraft.
