1.7.2 inventory controls no longer working?

Since the 1.7.2 update I can no longer do many controls in my inventory screen.

I have to hold the left mouse button down to drag items around.
I can no longer right click to use a single item
I can't shift-click to move items in and out of chests
I can't shift-click to instantly make all of an available item while crafting
I can't swap items by dragging one over the other, I have to manually move one to a blank square to swap the second one in
There's probably more that I'm forgetting right now.

Any tips or advice would be appreciated.

Have you tried deleting the options.txt file from the .minecraft folder?

You probably had the touch screen controls enabled.
