Okay so before the new launcher came out you could be completely disconnected from the internet [for days even] and still be able to play Minecraft.

Yes, that works. You can play offline if you're not connected to the internet, however this seems to only be because you've been previously authenticated by the servers.
I ran into the problem of not having internet AND not having a saved authentication for my account [Maybe it expired or timed out when I had to restart my laptop?] which resulted in minecraft being unplayable completely in any way shape or form. I don't know if this is a bug, or if it's intentional, but as someone who's legitimately paid for the game it's VERY disappointing as it means I cannot play minecraft on long trips where I simply don't have internet access of any sort. Is there any solution to this or will I just have to leave minecraft running 24/7 until it can be fixed simply so I can play truly offline.
You have always had to have logged in at least once, because that's the only way the game jars get downloaded.
Once you hit the log out button in the new launcher, you do need internet access in order to re-authenticate. I'm not aware of any other ways your authentication 'expires', either due to time passing or some other reason.
The authentication data appears to be stored in the launcher profiles file, and I was able to create a new profile and use it while disconnected from any networks (using a MC version that I had already used and was present in my install).
