Short and sweet: I am getting much lower FPS than I should be.
PC Specs:
i5-2500k @ 4GHZ
SLI EVGA GTX 770 w/ ACX Cooler
Gigabyte GA-Z68A-D3H-B3 (rev 1.3) motherboard
16 GB Kingston Hyperx RAM
Two SSD's / Samsung 840 and Kingston SSD
850W Corsair 80+ PSU
When I play on the regular servers I play on, I get around 70-100 FPS.
When I record, I dip into 40-55 FPS,
I was using a stable Java 7 64 bit and just tried the latest Java 8 development build. No performance difference. Any help would be greatly appreciated.
Side note: I have seen many users getting exponentially higher FPS than me on comparable or weaker hardware. Also, even if I am getting over 60 fps, when I go in shift+f3 mode the "lagometer" fluctuates and is going slowly with some red as well causing the game to not seem fluid, but rather choppy.

This is fine. Remember, a monitor can only display 60 fps at max. so, anything above 60 is just surplus lag protection. Don't worry about fps if you don't actually lag. and don't use Dev builds of java, since nobody knows how to fix stuff for that. 60 fps is plenty smooth.
If you really insist, then try undoing whatever you did that caused this recent drop. Or, reduce the video settings in minecraft.

With hardware like mine, I should not have to reduce settings. If anything, I should be able to ramp up the settings.
