This is quite normal behaviour, though it may also hint at world corruption.
Create a new world. Does it still happen? If so, then it may just be your computer.
This happens in all worlds, new, old, etc. Though it does seem to happen less in maximized mode than windowed. And I doubt its my computer since its a quad-core Phenom II with a 580GTX and a 280GTX and 8GB RAM. So I've been suspecting its either a memory control issue, or poor graphics mapping to the video card.
But what really stands out to me is that this was never a problem until the patch that started everyone seeing this. I don't remember which patch it was, but its been quite some time. And a patch soon after that fixed it for many people, but apparently not everyone. So as my CIO would say when something breaks, "what changed?".

^^This. You can see deep down into the earth and everything. Why is this happening?
Seriously? Minecraft didn't used to do this. It started several patches ago and hasn't been addressed since. But that doesn't make it normal.
Does anyone know if Mojang has any plans to address this or any tips to work around the issue?
