Is there anyway of getting a large GUI without fullscreen mode? If not, Is it possible to add it to the game? (mod it/actually add it)

The reason it's not changing past it is because certain elements wouldn't fit onto the screen anymore (cut off double-chest gui, etc).
What is your screen resolution? As said above, on some (lower) resolutions, it will stop scaling at some point.
My secondary PC is hooked up to my HDTV with a lower 1360 x 768 resolution, and even in fullscreen mode, there's no difference between normal and large (and auto).
On my primary PC, however, with a display at 1920 x 1200, there's a difference between each setting, including "auto" which is even larger than the large setting (but I keep it at large).
