You may need to create a batch file script to launch minecraft with more ram allocated or change Java's parameters to always launch with more ram allocated. Not sure how to go about that on a Mac.
I'm a little surprise just an HD texturepack would require this though. Perhaps your system doesn't have much ram to begin with? I'm assuming you have Optifine or MCpatcher as specified in the installation instructions?
I just looked at the Sphax FAQ and they very strongly suggest having a 64bit OS and Java, then allocating more ram if having memory issues. However I can't see from your error report anything to indicate this is a memory issue.
Perhaps try downgrading to the 256x pack version and see if crash goes away.
I would assume removing the texture pack from the texture pack folder would make the game revert to default. Why would the texture pack make the game crash at the start screen? I would think it would only crash once you launched a world.

I tried it with terrible results. I gave my wife my glasses for a second, a creeper showed up and now my wife is pregnant.
