Now, I am about to enter creative mode to find a stronghold in my world, but I really don't want to do that. It feels like cheating, and it shouldn't be necessary to find the stronghold.
I saved up 21 eyes of ender and went on a journey. I noticed that I would throw a couple in a perfectly straight line and then I would get to where the last one landed and throw one only t find that it was pointing a full 180 degrees the other way. so I go there and it goes back to the same spot only slightly more to the right and every time I throw another one it goes almost completely back to where I was standing only a couple blocks off. This zig zagging went on for about 10 mins in which I had used up all 21 eyes of ender and was standing in the middle of a field with my start point in sight (a small npc village).
This is the second time this has happened to me, the first being when I only had 5 eyes which is why I originally thought it didn't work. I was wrong. If I was on top of the stronghold It is supposed to float into the ground right. Instead it kept doing this weird zig zag pattern. I want to keep this world legitimate and not creative mode it, but what the heck else am I supposed to do.
I watch videos where guys have 9 or 10 and it takes them straight there. since this isn't the first time this has happened and I did it in two separate locations very far apart I doubt that I have found the magical equidistant spot between two strongholds both times.
Anyone who can help would be great. This is really getting frustrating.
Unless this is a really old world I doubt your issue is due to version changes to terrain. I'm assuming you've dug down in that area and found no stronghold? Also you mention the village as your 'starting point', however where is your original spawning point when you started this world in relation to this village? The reason I ask is because the 3 strongholds are distributed around you original spawn point roughly 500-1000 blocks away from it.
I recommend that you travel quite a ways (like 1000 blocks) in the direction opposite of your village from where the eyes are leading you now and try again. Hopefully from there it will lead you to one of the other 3 strongholds. If that doesn't work, go back to your original spawn point then walk farther in the direction opposite of your village perhaps 200-300 blocks and try using eyes again to see where they lead you.
the village is actually just over 1000 blocks away from my original spawn point (as I got the achievement for on the rails) and yes I dug down straight to bedrock but i will try a different spot in the area again to be sure (hopefully it's just that I was really unlucky on my dig down). I'll try the other thing you mentioned as well if this doesn't work.

I tried it with terrible results. I gave my wife my glasses for a second, a creeper showed up and now my wife is pregnant.
