Whenever I try running minecraft a grey screen appears with the following message:

The bolded part was your problem, Microsoft's drivers do not support OpenGL on Windows 8. If the new DxDiag still shows that line, you did not update successfully.
Please post your DxDiag log again, it should have worked.

you're right the DixDiag still said "Card name: NVIDIA GeForce GTX 260M (Microsoft Corporation - WDDM v1.2)" There must have been some issue when I tried to change the driver
You can attempt to uninstall the drivers, then reinstalling with the link I provided above. Note, this will revert your desktop to a lower resolution and disable AERO. But it should be fixed once you install the new drivers.
To get there, click on the Start menu, then right click on Computer, then select Manage. With the window that pops up, click on Device Manager on the left. Then open the drop down for Display Drivers on the right. Double click on NVIDIA GeForce GTX 260M, go to the Drivers tab.
