There's some kind of updater (root.gameRenderer.level.updatechunks.rebuild) that runs for a while and updates every single chunk in your world (?) and then stops. While it is running you get a much reduced FPS, but then it pops back up to where I expected it to be.
Unfortunately it does seem to run every single time you start MC, as opposed to just once per world (like if it was to fix a bug in chunk data).

Cestislife said that he was getting lag with 1.5 and that optifine said they would have a fix.
Word is that the changes to the lighting are causing this. Dinnerbone himself acknowledged that they are struggling with the new lighting engine because the current version is very resource heavy and drops framerates substantially. Many people report that turning off smooth lighting brings frame rates back up.
My specs:
Intel Core i7 920
ATi Raedon HD 6700
12gb ram
My settings are relatively high, with smooth lighting and Far render distance, but these are the same settings pre 1.5.
Any idea what could be hindering my beast?

I tried it with terrible results. I gave my wife my glasses for a second, a creeper showed up and now my wife is pregnant.
