When I put the Mac client into fullscreen mode (F11), and then leave fullscreen mode, my monitor looks all washed out (too bright, lower contrast than normal). Minecraft is doing something, presumably at the video card level, to change the display gamma, and not restoring in when it leaves fullscreen mode. I haven't noticed this with any other games.
After playing minecraft fullscreen, the only workaround I've found to get my monitor back to its normal look is to logout of OS X and log back in. Going into the Display control panel and changing the gamma settings there does not resolve it, which is why I think it's an OpenGL video card issue.
FWIW, I'm using an early 2008 MacPro 8x2.8 which I've upgraded with an ATI 5870 graphics card. I have the latest ATI catalyst drivers.
